“Calzo della vignia" was born in the Castellari, Saetta and Vernaccio vineyards on the beautiful Tuscan island, caressed by winds that smell of the sea and characterized by loose soils of granite origin. It is a wine that perfectly reflects the originality and passion behind this winemaking project. It is made entirely from Ansonica grapes, harvested and selected by hand from the three vineyards in early September. In the winery, the grapes are left to ferment and macerate on the skins for 4 months, after which, the wine is rested and aged in tonneau for 6 months, in fine followed by at least 24 months of bottle aging. The nose releases a unique olfactory complexity, with notes of white flowers delicately blending with fruity (peach) and tropical (mango,pineapple) scents. This heady scent is distantly reminiscent of the fragrances of French Sauternes or Canadian Ice wines. On the palate it proves to be a wine of great elegance, with fruity sensations beautifully accompanied by a good minerality, characteristic of the terroir to which it belongs. Perfect in combination with white and red meats, it also proves an excellent companion to fish dishes. Wonderful meditation wine.
